Which color cable is the ground?

It does not matter which color you use for ground. The encoder is looking for the two wires to be electrically equal.

Does this come with 5-pin cables for the joysticks or do you use the 2-pin cables that are included?

This does not come with the 5 pin cables. I had to return them and got another set that had them.

can i use this to for a second programmable , remappable keyboard for my pc, and how many buttons could this handle?

Possibly? Might require soldering. I think it can be used for up to 14 keys?
