What can be said about this knife that hasn't already? I just wanted to add my voice to the cacophony of approval for this excellent knife. More expensive chef's knives can be had, yes. Higher quality, too. If you really love cooking and you have a bunch of money to spend and you really care about the quality of the steel and the heritage of the design and the exact alloy that went into the blade and the quality of the wood on the full-tang handle, this is probably not the knife for you. If you cook at all, though, and you don't have a bunch of money to spend on a fancy knife, then this is easily your best option. Even if you've never bought a knife outside of a block set before. Even if you don't really like to cook. Especially if you've only bought knives in a set or don't like to cook, even. This knife is so good that you will find yourself wondering why you didn't like chopping before. You will hate cooking away from home because it will mean using a knife that isn't this one. It's that good. I bring it along when I'm going to cook somewhere. Let's talk about the steel. Who cares? If you're buying this knife you probably don't. You don't need to. All you need to know is it comes sharp and it stays that way, and it hones up nicely with a diamond rod. It cleans easily, it doesn't rust, and it's got a nice weight to it. The shape is as it should be. Don't stick it in the dishwasher, although you could probably get away with it a few times. But don't. Let's talk about the handle. It's made of some kind of plastic, but again, who cares? It has a nice texture that keeps it in your hand, the shape is great for prolonged use, and it doesn't leak like some hollow-handled knives do (water can get in and rust your handle from the inside; not here). For this price, for this knife, it's a no-brainer. Buy it. Buy it, buy it, buy it. Even if you have fancier knives, buy it. Even if you don't think you need a knife this big, buy it.

Exceptional Value for a Budget Knife
I own many knives, and I’m not sure why I waited so long before buying this one. Perhaps it was because I already had several expensive knives and felt like I didn’t need another budget knife. Let me tell you, this one is fantastic value. Right out of the box, it came with a great edge, ready to tackle any kitchen task. The ergonomics are impressive, making it comfortable to use for extended periods. Surprisingly, I find myself reaching for this knife more often than some of my pricier ones. Our favorite knife
It’s a plastic handle but these knives are my absolute favorite. I go between this and the santoku and both work great. I think they are a great value and are extra sharp out of the box. Good size and weight for easy use.

Excellent knife
Nice weight, well balanced, incredibly sharp, well formed and comfortable handle. In summary, everything a chef's knife should be at a reasonable price. I've only used it for a week so cannot say how the knife will hold the beautiful edge it arrived with, but it is still sharp enough to cut ripe tomato perfectly.

Nice knife
As the other reviews have stated, this knife is viciously sharp. I can't vouch for how long the edge lasts as I've only used it a handful of times, but it's edge out of the package is far sharper than anything else I have. Also, the knife is very economically priced. For those two reasons, I gave it 4 stars rather than the three I wanted to. My main complaints relate to the appearance and feel of it. The build and feel of this knife is horribly cheap. If you didn't know what it was and didn't actually use it, you would swear it was a dollar store chef's knife. I leave the knife in it's box and hide it away when it's not in use. That said, as functionality goes, it works excellent and is my go-to knife when I have a big cutting job.

Fantastic Sharpness. Makes Cutting Celery and Potatoes Effortless
I read Wirecutter's testing of many knives and I was loathe to pay $140 for the top recommended knife, but this was the choice if you wanted a "budget knife." Being old, I have to laugh at the "budget" label, as I recall when a knife like this would have been $20 sixty years ago. I carefully pulled the knife from the box, as it was - according to the New York Times Wirecutter review, extremely sharp. I immediately pulled a potato out of the cabinet, put the knife on top of it, and it cut through it as though it was warmed-to-room-temperature butter. Loved it, but being a strong guy, I was awed by how easily it cut through the potato. I also thought I should never handle this knife carelessly. I cut tomatoes, celery (was making clam chowder soup, anyway). And the height of the blade is enough that when you hold it, your hand does not EVER COME NEAR THE COUNTER UNDERNEATH. I'm used to blades not quite as deep. All I can say is: Try It. You'll like it.

I've had it 5 months. I just purchased another so that I'll always have one ready. I ordered 2 others of different sizes. Really holds an edge, dishwasher safe. Great balance in hand. It's a joy to use.

Why did I wait 40-some years to buy an adult knife?
After using this knife twice at my daughter's home and swearing that I would steal it from her, I bought one for myself. Couldn't be happier with that decision. After 40 years of using an old butcher knife my Dad passed on to me, and banging my knuckles while trying to chop or slice through vegetables and meats, I have a proper blade that is lightweight but sturdy and sharp, with a lifetime guarantee. A sheath would have been nice (because this doesn't fit the knife block Dad made for me), but you can get a sheath that fits like a glove through another amazon seller.

Swiss made quality!
What to say? This is the bests quality you will get for such a low price. As a Swiss and passionate chef I know what I am talking about. Screw all the super expensive as well as the cheap knifes you can buy. Just like with the Swiss army knifes, Victorynox delivers a perfectly balanced chef's knife with no fancy promises. It simply delivers on its professional promise: A solid blade, well balanced, and a proper plastic handle. The latter makes it perfectly machine washable. Just sharpen it before every use like every pro chef does, and you have a life companion. On a side note: All the reviews here claiming its not sharp or looses sharpness quickly ... really, these guys just dont know how to maintain their tools like a professional. Cant win a war with them for sure. Just whinging and whining. Should grow up and learn how its done properly ... Just my ten cents worth!

Great knife, good price
I cook for a living and any kitchen I’ve worked in if this knife is there, I grab it before anyone else does. It’s light so you don’t get fatigued using it all day and has a nice blade that holds its edge and it sharpens very easily. I finally decided I needed to have my own. It’s now my go to knife over my other 2 chef knives that cost much more than this one!
